Brandy is a spirit made from fruit, most often grapes. Cognac is a special type of brandy from the Cognac region of France. It is distilled twice and aged in oak barrels, which gives it a smooth, warm taste with notes of fruit, spice and oak.
The letters on the bottle tell you how long it has aged:
- VS (Very Special) is aged at least two years. It is lively and fruity, and it works well in mixed drinks.
- VSOP (Very Superior Old Pale) is aged at least four years. It is smoother and rounder, good for sipping or mixing.
- XO (Extra Old) is aged at least ten years. It is rich and complex, and usually enjoyed slowly on its own.
